Genes are interlocutors and an opportunity for dialogue with the environment. The plasticity of the genome is an extraordinary fact. Inspired by the course program and the work of Randy L. Jirtle, we invite you to appreciate the teaching content we propose and what the memories of the knowledge journey can do in the professional exercise of guidance and nutritional monitoring of pregnant women, lactating women, children and teenagers. The genotypic-environmental interaction – the dialogue – begins with the beginning of life. We started the conversation, i.e., the technical-scientific discussion, from the meeting of sparks of life, gametes throughout adolescence. Food planning, designed to match and go beyond metabolism, paired with development and growth, is a determinant of well-being and health. It will interfere in favour or against the probability of certain chronic diseases or in the full phenotypic expression of the most varied parameters of development and growth. Everyone will easily see existing associations between dietary intervention and the optimization of physical, motor, mental and socio-emotional expression. Thus, with this course, led by a team of nutritionists who combine a noteworthy academic and professional background, students will benefit, objectively and pragmatically, from a transforming impact on professional practice and, inherently, people and society.
